Up until now, all my jobs have been for local doctors, services and hospitals, so this has never come up for me before. It just occurred to me that my new job (as an employee) is for a service that is not in my state. I am in NY and they are in GA. How does this work for state taxes? Will they be able to take out taxes for my home state? Or do I have to pay state taxes to the state they are in? Or both their state and my state? I know, probably a really dumb question, but I never had to consider it before.

Ann, you will need to pay the income tax for the state where you live. Some nationals take out state tax for you, some don't. You need to check with your new employer as to what their practice is. If they do take taxes out for you, you should have completed a form W4 (withholding) for your state as part of your hire on paperwork. If they don't take out taxes, you will need to file estimated taxes yourself quarterly. I'd see an accountant about that.

My national takes out state, but not my city taxes in the state I live.

OMG - you have to pay city taxes too?!!! I sure am glad we don't have that. Do you pay city income tax in addition to property taxes (assuming you own) or is it a replacement?

We rent, but if you work in the city, which at home you do, you pay income tax, like 1.5%. It was like that in MI, too.
